Instructions

  1. Heat the oil: Heat olive oil in a frying pan over medium heat. Add garlic and chilli, and sizzle for 1-2 minutes until fragrant.
  2. Cook the sardines: Add the sardine fillets and cook for 2-3 minutes, turning once, until warmed through and lightly golden.
  3. Toast the bread: While the sardines cook, toast the bread slices until golden.
  4. Add lemon: Squeeze lemon juice over the sardines in the pan and season with salt and pepper.
  5. Assemble: Divide sardines between the toast slices, spooning over the garlicky chilli oil.
  6. Finish and serve: Scatter parsley and lemon zest on top, and serve immediately.
